Lemon Garlic Tilapia with Sundried Tomato Quinoa

We have been cooking a lot of fish lately. Here is a simple Tilapia recipe that I came up with the other night. Perfect for a light summer dinner.

Lemon Garlic Tilapia

Ingredients

  • 4 tilapia fillets
  • 1 lemon
  • 4 pats of truffle butter
  • 2 cloves of garlic, minced
  • 1 tbsp of cilantro
  • salt & pepper

Preparation

  1. Preheat your oven to 375. Spray your baking dish with cooking spray or olive oil.
  2. Place tilapia in baking dish, squeeze lemon juice over the fillets. Place a pat of truffle butter on each fillet. Sprinkle them with garlic, cilantro, salt and pepper.
  3. Bake in the oven until white and flakes with a fork. Approximately 30 minutes. Remove from oven and serve hot
